Liptauer Cheese Spread

   In a large bowl, using a fork, blend the curd cheese, sour cream, and herbs. Add the spices, using a generous hand with the pepper and paprika (but go easy on the salt, as the curd cheese may be salty). Blend well. Go for a spreadable consistency.

   Scrape into a serving dish and cover. Chill for several hours to allow flavors to blend. Garnish with a sprinkling of minced fresh herbs or paprika just prior to serving with crisp crackers...rye toasts are particularly tasty.

   To modify this into a dip, add an additional tablespoon or two of sour cream to achieve a dippable texture. Serve with an assortment of crudites. The flavors go well with cucumber spears, celery sticks, and pepper wedges.
