Lime Rickey

   Stir sugar and lime juice together in a small saucepan.

   Bring to a boil, reduce to a simmer and cook until sugar is fully dissolved and liquid is syrupy, about 2 minutes.

   Let cool to room temperature, 30 minutes.

   Combine syrup with club soda and gin (if using).

   Serve immediately over ice.
