Lentils And Bulgur Meatballs

   For the meatballs, place bulgur and lentils in a pan and cover with water at a ratio of 1 part grain to 2 parts water.

   Boil for about 15 minutes.

   Cover and set aside for 10 minutes.

   Heat olive oil in a pan and saute onion, garlic and chopped leek.

   Add tomato paste and cook for 5 minutes.

   Add bulgur, lentils, breadcrumbs, parsley and chives.

   Season with salt to taste. Mix well with a spatula.

   Cook over low heat for 3-5 additional minutes.

   Let cool slightly and shape mixture into balls.

    Set aside.

    For the sauce, heat olive oil in a saucepan and saute onion and chopped garlic for 3 minutes, add tomatoes and season with salt to taste.

    Cook briefly until tomatoes are soft and falling apart.

    Add sliced mushrooms and saute until mushrooms are cooked.
