1
Wash the lemon very well and grate the rind for zest.
-
2
You can grate it straight into the mixing bowl.
-
3
Preheat your oven to 180 C.
-
4
Meanwhile, add yogurt and sugar to the bowl with the lemon zest.
-
5
This prevents the sugar from becoming lumpy later.
-
6
Here is 1 cup of yogurt.
-
7
It's quite a lot!
-
8
This is the sugar.
-
9
Do not press, just scoop one cup.
-
10
Then, add up to 50 ml extra.
-
11
Now, add the egg and oil to the bowl.
-
12
Mix well.
-
13
You don't have to worry too much about dissolving the yogurt and sugar completely as you still need to add flour.
-
14
Measure the flour like this.
-
15
Just scoop 2 cups.
-
16
Add flour and baking powder into bowl and combine.
-
17
It is better if you sift it into the bowl.
-
18
When everything is together, pour into a baking pan greased with butter.
-
19
Tap it on the kitchen counter a few times to release any air trapped inside the batter.
-
20
First, bake in an oven preheated 160 C for 30-35 minutes.
-
21
Then, turn the heat up to 180 C for another 5-10 minutes until golden brown.
-
22
If a skewer or toothpick inserted in the center comes out clean, it's done.
-
23
Tip for washing lemons!
-
24
Wet your hands and then rub the lemon with baking powder or baking soda.
-
25
Rinse.
-
26
It will be nice and clean!
