Lemon Shortbread Cookies

   Preheat oven to 180 degrees Celsius.

   With an electric mixer, beat butter and sugar until creamy.

   Gradually, add the zest, baking powder and flour.

   Mix with your fingers until smooth.

   Turn the dough into a lightly floured surface and roll it out into a circle at least 1 cm thick.

   With a cookie cutter, cut 12 rounds of dough.

   Prick each round with a fork.

   Refrigerate for 10 minutes.

   Bake 20 to 25 minutes until lightly golden.

    While still hot, sprinkle with granulated sugar.

    Let cool on a wire rack.
