Lemon Pie Filling

   Mix in saucepan the sugar, cornstarch and water.

   Cook over moderate heat, stirring constantly, until mixture thickens and boils.

   Boil for 1 minute.

   Slowly stir 1/2 of the hot mixture into egg yolks.

   Mix well and add rest of mixture.

   Boil 1 minute longer.

   Remove from heat; continue stirring until smooth.

   Blend in butter, lemon juice and rind.

   Put in prepared crust and cover with meringue* and bake at 400u00b0 for 8 to 10 minutes.
