Add remaining sugar and whisk for 3 mins, or until sugar dissolves. Add cornstarch and vinegar and whisk until just combined. Lightly fold in 2-3 drop food coloring.

Transfer to a piping bag fitted with a 3/4 inch plain tip. Pipe 1 inch discs onto prepared trays, about 1 1/4 inches apart. Dip a butter knife into remaining food coloring and swirl through meringue tops. Bake for 45 mins, or until dry to the touch. Let cool in oven with door ajar.

Whip heavy cream to stiff peaks then fold into lemon curd until just combined. Sandwich meringues with 1 tsp lightened lemon curd. Serve.
