Lemon Cookies

   In a food processor, pulse together the butter, sugar, flour, salt, and lemon zest.

   When it starts to form a ball, stop.

   Add the lemon juice and pulse another 2 to 3 times.

   Roll the dough out into a long sausage shape and wrap in plastic wrap.

   Refrigerate for 30 minutes.

   Preheat the oven to 160 degrees Celsius.

   Line a baking tray with parchment paper.

   Remove the dough and the plastic wrap.

   Cut the dough into 1-centimeter wheels and place them on the baking tray.

    Bake for 10 minutes or until the edges are golden.

    Do not move them much until they have cooled.
