Mix the mascarpone, ricotta, lemon juice, lemon zest, vanilla extract, and sugar together. In a separate bowl, whip the cream until stiff then fold into the mascarpone mixture.

Mix the coffee and liqueur together. Place half the ladyfingers in the bottom of a clean baking dish. Pour over 2/3 cup coffee mixture.

Set aside 15 raspberries. Fold the remaining raspberries into the mascarpone mixture, then spread half of the mixture over the bottom layer of ladyfingers. Dip the remaining ladyfingers in the remaining coffee mixture until soaked through then lay them in a single layer on top of the mascarpone. Spread the remaining mascarpone on top. Chill for 4-5 hours.

Remove the tiramisu from the fridge. Grate the chocolate using a peeler then sprinkle over the tiramisu. Dust with cocoa powder then serve, garnished with raspberries.
