1 prepared 9-inch pie crust, baked
2 pints strawberries, divided
½ cup granulated sugar
2 tablespoons cornstarch
1 pinch salt
½ cup water
¼ teaspoon red food coloring
2 tablespoons lemon juice
1 pint whipping cream
8 ounces cream cheese
½ cup powdered sugar
½ teaspoon vanilla
1 pinch salt

Prepare and bake pie shell, cool.

Wash and halve strawberries.

Whisk together the sugar, cornstarch and salt in a large saucepan.

Add the water and stir over medium heat until sugar dissolves.

Add half the strawberries, stir over medium high heat until thick.

Remove from heat, stir in lemon juice, food coloring and remaining strawberry halves.

Cool completely before putting on top of cream filling in pie shell.

While strawberry filling cools, whip the whipping cream.

In separate bowl, beat together the cream cheese, powdered sugar, vanilla and salt.

Fold in the whipped cream.

Spread in the bottom of the cooled pie shell.

Once the strawberry filling has cooled, gently put it on top of the cream filling.
