Toast spices in a small nonstick skillet on medium heat for 2-3 mins, until fragrant. Set aside to cool.

Pound spices to a fine powder in a mortar and pestle. Stir in 1 tbsp oil. Season to taste. Rub over lamb. Marinate for 20 mins.

Preheat an oiled grill pan or large skillet on high heat. Cook lamb for 3-4 mins each side, until cooked to desired doneness. Cover and let stand for 10 mins.

Toss arugula, lime juice and half of remaining oil in medium bowl. Season to taste.

Layer arugula, lamb fillet and yogurt on flatbreads. Roll each to enclose filling. Secure with a toothpick.

Brush with remaining oil. Cook in grill pan, in batches, for 1 min each side until golden and crunchy. Serve sliced, secured with toothpicks.
