In a medium mixing bowl, whisk soy sauce, honey, mirin and sesame oil. Divide evenly between 2 bowls and stir ginger and spring onions into one bowl. Set aside. Add the lamb to the other bowl and toss to coat. Allow to marinate for 15 mins.

Cook noodles and beans in a saucepan of boiling water for 4 mins. Drain well, rinse and add to ginger dressing. Toss well to combine.

Meanwhile, heat a skillet over medium heat. Toast sesame seeds for 2 mins, or until fragrant. Remove from pan and set aside.

Heat oil over medium heat in same skillet; using tongs, place lamb into skillet and cook for 1 min each side. Pour in marinade and continue to cook for 3 mins each side, basting regularly. Remove from pan and set aside to rest for 2 mins.

Slice lamb on an angle and toss with noodles. Serve in bowls, garnished with mint leaves and a sprinkling of sesame seeds.
