Ingredients: 1 lb. ground beef; 1 Tbsp. cooking oil; 1 bell pepper, chopped; 1 small onion, chopped; 1 tsp. salt; 1 tsp. pepper; 1 can Ro-Tel tomatoes; 1/2 lb. Velveeta cheese; 1 pkg. flour tortillas; 1/2 c. cooking oil for tortillas; 1 1/2 c. Cheddar cheese; 1 c. Monterey Jack cheese

1 lb. ground beef
1 Tbsp. cooking oil
1 bell pepper, chopped
1 small onion, chopped
1 tsp. salt
1 tsp. pepper
1 can Ro-Tel tomatoes
1/2 lb. Velveeta cheese
1 pkg. flour tortillas
1/2 c. cooking oil for tortillas
1 1/2 c. Cheddar cheese
1 c. Monterey Jack cheese

Brown ground meat; drain fat.

Add bell pepper, onion, salt, pepper, tomatoes and Velveeta cheese.

Simmer on low heat for 15 minutes.

Place flour tortillas, one at a time, in hot cooking oil for about 5 seconds.

Drain on a paper towel.

Put a small portion of the meat mixture on the bottom of a long casserole dish.

Add about 2 tablespoons of meat to each tortilla; roll up tortilla and place in the casserole dish.

Top with remaining meat mixture and Cheddar cheese; bake for 30 minutes.
