Cook the chicken boling it on water. This can be done on the microwave to save time!

Boil the potato with some sprinkle of salt. Once is cook retire from water and slice

Saute the chopped onion with the thyme on olive oil to break down ingredients to medium brown but no overly done. If you wish add chopped pepper. Your favorite color.

When chicken & potato are done add to onion and thyme with the salsa and mix. Leave for aprox 5-7 minutes. Then place all on a food processor. This mixture will be the part you place inside the empanadas.

Dough for fried empanadas

1 cup of precooked white corn meal Pan. You can get it in Publix

7 ounces of really hot water.

Mix on a big bowl. Create small to medium side balls and flat them and put the mixture of onion inside.

Carefully fold over the circle with contents into a semicircle. Press the edges together to seal. Create all dough with filling

Dough for baked empanadas

1 cup of all purpose flour

2-3 medium spoons of oil olive

7 ounces of hot water.

Instructions:

Create the dough and repeat the process of creating the empanadas. Once you have them ready you will brush them with egg. This will give them a very nice brown color once they are baked.

Put on a tray for baking covered with aluminum foil and then spray olive oil. Put to bake from 350-390 for aprox 15-17 minutes. Leave o oven 5 minutes more after they are done.

You can accompany them with Tabasco or prepare a mixture of Pico de Gallo: tomato and onion and cilantro, lime, a teaspoon of salsa and a sprinkle of salt & pepper.
