Jamaican Sweet Potato Pudding

   Preheat oven to 350u00b0F. Grate sweet potatoes either using a box grater on a finest setting or a food processor.

   Put flour, ground mixed spice or pumpkin pie spice, nutmeg and salt into a bowl and mix. Stir in grated sweet potatoes. Add the rest of the ingredients and mix everything well.

   Grease a 8-inch cake pan and pour the mixture into it. Bake for 40-60 minutes or until it is firm to the touch. Remove from the oven and allow to stand for at least 30 minutes before serving.
