Preheat oven to 350 F.

Put butter into a large microwave safe bowl and melt it in the microwave. This should take about 60 seconds but if not, heat for additional 30 second increments until melted. Let it cool a little bit, then mix in the other wet ingredients (eggs and vanilla). Set aside.

Mix dry ingredients in separate bowl and then stir into the wet mixture.

Using a cookie scoop or a tablespoon, spoon the dough onto greased cookie sheets, spaced a couple inches apart (they don't spread very much), and then press your thumb into the center to create a spot for the jam.

Spoon the jam flavor of your choice into the cavity. Bake at 350 F for 10 minutes. The cookies will still be very pale, but should look and feel dry, not doughy.

Once the cookies have baked, remove them from the tray to cool. After a few minutes (while still warm, but not piping hot) sprinkle confectioners' sugar over the cookies.
