Irish Cream Liqueur And Strawberry Iced Mousse

   Cut 100g of the strawberries into slices.

   Put the remaining 150g strawberries into a food processor or blender with the icing sugar, Carte D'Or Vanilla Light Ice Cream and 4 tbsp of Irish Cream Liqueur. Blitz to make a coarse puree.

   Divide the puree mixture between 4 dessert glasses, place in the freezer and semi freeze for 20 minutes.

   Break the chocolate into a small heatproof bowl and place over a small pan of simmering water until melted, remove from the heat and add the honey and remaining Irish Cream Liqueur.

   Remove the mousses from the freezer and top with the strawberry slices.

   Serve immediately with the chocolate sauce drizzled over the top.
