1-cook sugar very slowly (I use nonstick pan)...when golden (watch it, easy to burn!) pour quickly into 8 inch dish-tilt pan to let syrup flow over bottom of pan and slightly up sides--use hot pads! (I use a metal pan, or heat resistant glass),cover and set 10 min

4-add next 3 ingredients and beat alot, pour into sugared pan

5-bake 350 degrees for 55 min in hot water bath (put filled flan pan in larger pan filled with about 1 inch of water which has been in the oven when preheating)Flan will not seem solid when you remove from oven, not runny but it jiggles a bit

6- refrigerate over nite, run knife around edge of pan, invert over chilled plate, let sauce flow out, cut in wedges and spoon on sauce
