Preheat oven to 300F.

Heat the oil in a large heavy pot to 320F or use a deep fryer.

Whisk the cornmeal, flour, baking powder, salt and pepper in a bowl.

Whisk the egg and the milk in a small bowl, then add it to the cornmeal mixture and just stir to combine.

Working in small batches, slowly add a tablespoon of the batter to the hot oil.

(I dip the tablespoon in the oil before each one so the batter won't stick to the spoon.)

Let it fry and turning golden brown, about 2-3 minutes.

Remove from the oil with a slotted spoon and let drain on paper towels briefly.

Transfer the now cooked hush puppies to a shallow baking pan and into the oven so you can finish the rest of the hush puppies in the fryer.
