Divide buttermilk mixture among eight 2/3-cup glasses. Refrigerate about 6 hours or overnight until set.

For the apricots in thyme syrup, bring 2 cups water, remaining honey and the thyme to a boil in medium saucepan. Add apricots. Reduce heat to low; simmer, uncovered, for about 5 mins or until almost tender. Remove from heat. Add lemon juice. Cool slightly then refrigerate until cold.
