In a small saucepan, heat honey and butter together over low until melted and simmering. Let cool for 5 mins. Sift together flour, baking soda and spices. Add butter mixture and milk, stirring, until combined. Cover with plastic wrap and chill for 30 mins, until firm.

Turn dough out onto a lightly floured surface. Knead, working in a little extra flour gradually if needed, until mixture is no longer sticky. Shape into 2 logs, each about 2/3 inch thick. Cut into 1/4 inch thick slices lengthwise and arrange on trays. Shape into ovals then bake for 8-10 mins, until beginning to crack. Let cool on trays.

Meanwhile, to make the icing, whisk egg white until frothy. Gradually add powdered sugar and mix until smooth. Add food coloring then spread over cooled cookies. Set aside until firm.
