Honey Ginger Cookies

   Preheat oven to 350u00b0F.

   In a large mixing bowl, add in the flour, sugar, baking soda, ginger, and lemon zest; mix and set aside.

   In a separate mixing bowl combine the honey, canola oil, and Sprite.

   Pour the wet ingredients into the dry ingredients and mix until you get a shiny cookie dough. Drop the cookie dough by the spoonful onto a lightly greased baking sheet.

   Bake in the preheated oven for about 12 to 15 minutes. Then remove from the oven and let cookies stand on baking sheets for a couple of minutes before removing them from the pans to cool on wire racks.

   Serve with a cup of coffee or tea.
