1
In a large bowl combine the egg, 1/2 tablespoon of olive oil, breadcrumbs, onion, garlic, salt, and pepper.
-
2
Add the ground chicken and mix until just combined.
-
3
Scoop about 1 tablespoon of the chicken mixture to form each meatball.
-
4
Heat 1 tablespoon of olive oil over medium heat in a large pan.
-
5
Add the meatballs in an even layer and brown them on all sides.
-
6
Depending on the size of your pan you may need to do this in batches.
-
7
Once browned all over remove the meatballs and set aside.
-
8
In the the same pan, pour in the BBQ sauce and bring to a boil.
-
9
Scrape up all the brown bits on the bottom of the pan using a spatula or wooden spoon.
-
10
Add the lemon juice and honey.
-
11
Stir the sauce and let it cook for 1-2 minutes.
-
12
Add the meatballs into the sauce and gently roll them around to get them fully coated.
-
13
Let them cook a few more minutes just until they are cooked through (you can always cut into one to make sure its not pink inside).
-
14
Serve them with ranch dressing on the side.
