Honey And Cinnamon Glazed Sweet Potatoes

   Preheat oven to 400 F. Line a rimmed baking sheet with aluminium foil and spray with cooking spray. Set aside.

   In a large bowl, add potatoes and onions; set aside.

   In a small bowl, whisk together, olive oil, honey and cinnamon. Pour over the potato and onion mixture. Mix together well-I used my hands.

   Spread potato mixture onto prepared baking sheet and season with salt and pepper. If you want you can also give a small sprinkle of cinnamon. Place in the oven for 15 minutes then flip the potatoes and cook for another 15 minutes or until fork tender. Remove from oven.

   In a microwave safe bowl, add the topping ingredients. Place in the microwave and heat for 15 seconds or until melted.

   Pour potatoes in a bowl and stir in the cranberries and top with melted butter mixture. Serve immediately.
