Homemade Tomato Soup With Basil

   Boil tomatoes whole in large pot for 10 - 15 minutes, or until peels start to come off.

   Allow to cool and peel and core tomatoes.

   Chop onions finely and sweat in large sauce pan with olive oil

   Chop garlic and add to sauteed onions

   Add peeled and cores tomatoes and mash with potato masher.

   Allow to simmer for 15 minutes.

   Blend entire mixture and strain through metal strainer.

   Heat again and add broth and cream and bring to slight boil.

   Add salt and pepper to taste.

    Allow to simmer for another 60 minutes.

    10 minutes before serving add basil and sugar.

    Serve with your favourite grilled cheese sandwich.
