Prepare double espresso or brewed coffee. Add almond milk, pumpkin puree, maple syrup, and pumpkin spice in a saucepan over medium heat. Wisk everything together until completely combined. Let it cook for a few minutes (no longer than 4-5 minutes).

When done, transfer mixture to a French press or put in the blender. This step is optional; if you want a nice and creamy foam, then you don't want to skip it! If you are using a French press like me, just pump the plunger up and down several times and you are done. In a blender, everything is a bit easier-just blend for a couple of seconds and that is it!

Divide an equal amount of coffee into two cups and add pumpkin mixture. If desired, sprinkle with a little bit of pumpkin spice or cinnamon.
