Preheat oven to 350 F/175 C.

1. Cook elbow macaroni according to the package directions. Drain and set aside.

2. In a saucepan, melt butter over medium heat. Stir in flour to combine with the butter and make a roux, stirring constantly. Add milk into the roux slowly, stirring constantly. Stir in cheeses, and cook over medium heat until cheese is melted and the sauce is a little thick. Put elbow macaroni into a large casserole dish (9x13 or similar), and pour cheese sauce over macaroni.

3. For topping: Melt butter in a skillet over medium heat. Add breadcrumbs and brown. Spread golden breadcrumbs over the macaroni and cheese, then sprinkle with a little paprika.

4. Bake at 350 F (175 C) for 30 minutes. Remove dish from oven and set on a rack. Cool for 5 minutes then serve.
