1. Preheat oven to 350u00b0F and take ice cream out of the freezer to soften.

2. Whisk together melted butter and white sugar.

3. Whisk in egg and vanilla.

4. Whisk in flour, cocoa and salt until batter is smooth.

5. Spread dough in a 10x15 inch pan with sides lined with parchment paper. Leave an overhang of a couple of inches at each of the shorter edges of the pan.

6. Bake for 10 minutes or until the edges start to pull away at the sides.

7. Let cool.

8. Using parchment paper, lift the cookie out of the pan. Use a pizza cutter to cut the cookie in half crosswise.

9. Place one half back into the pan and spoon over softened ice cream. Top with the remaining cookie half.

10. Wrap tightly in plastic wrap and chill for 2 hours or overnight.

11. When chilled, remove from freezer and cut into 8 pieces, Enjoy!
