Combine flour and sugar. Cut in butter until mixture resembles breadcrumbs. Whisk together egg yolks, 1 tbsp ice water and vanilla. Add to butter mixture to make a firm but pliable dough. Knead lightly. Wrap in plastic wrap and chill for 30 mins.

Preheat oven to 350u00b0F. Lightly grease and line a 7x11 inch rimmed baking tray with parchment paper.

Cut pastry dough in half. Roll out each portion between 2 sheets of baking paper. Ease one half into prepared pan and spread evenly with fruit mixture. Cover with remaining dough. Sprinkle with sugar. Bake for 40-45 mins, until golden. Let cool in pan on a wire rack. Cut into squares.
