These are medium-sized sweet potatoes.

Wash well.

Wrap each sweet potato in a moistened paper towel.

Wrap the sweet potatoes over the wet paper towel with foil, and bake in a 150 C oven for an hour and a half.

Leave the potatoes until they are cool in the oven.

Peel the cooled potatoes using a knife.

Carefully remove all the skin.

Cut each sweet potato in half, lengthwise, then slice thinly.

Moisten the knife blade before each cut to prevent the potatoes from getting squashed.

Line them up on a sieve so that they don't overlap.

Leave them out to dry in a sunny place, like on a sunny balcony.

After a day, turn the sweet potato pieces over.

Turn them again the next day.

I left them out overnight too.

1: I steamed big sweet potatoes for about 50 minutes.

Maybe I didn't steam them for long enough, but the sweet potatoes weren't soft in the center.

2: I baked the potatoes for an hour and 15 minutes in a 150 C oven, then tried to cut the potatoes before they were cool but the centers were still raw...yet again!

I think the reason this succeeded was because I left the sweet potatoes to cool down in the oven.
