Heavenly Sweet Cappuccino Chip Muffins With a Cream Cheese Sprea

   Using a hand mixer, mix together the spread ingredients, cover, and refrigerate until serving.

   For the muffins: In a bowl, combine the flour, sugar, baking powder, cinnamon, and salt.

   In another bowl, stir the milk and coffee granules until coffee is dissolved.

   If you prefer a more mild coffee flavor, you can add less granules with no problem.

   The recipe does not have an extremely strong coffee flavor in the first place, though, so these are kid taste approval safe!

   Add butter, eggs, and vanilla to the coffee mixture.

   Stir into the dry ingredients until combined, but do not over mix.

   Fold in the chocolate chips.

   Fill paper-lined muffins cups two-thirds full and bake at 375 degrees F for 17-20 minutes or until a toothpick inserted into the center comes out clean.

    Cool for 5 minutes before removing from the pans.

    Let muffins cool all the way before applying spread, or the spread will melt.
