For the salad:

Cook 2 pieces of bacon and set aside to cool.

Put lettuce in a bowl. Slice dates into strips and add to the salad bowl. Cut peach into wedges and add to the bowl. Crumble goat cheese and add to the bowl. Crumble bacon and add to the bowl.

Start by using a jar or a leak-proof Ziploc container.

Add balsamic vinegar to jar or container. Whisk in dijon mustard, maple syrup, salt and pepper. Add the olive oil last and put on the lid tightly, then shake vigorously to combine.

Please note that this makes extra dressing, and you only need a little bit. Pour desired amount of dressing over salad and toss.
