First, let's make some hazelnut butter. Put the hazelnuts in a grinder and press the button until you get a thick paste. Use a spoon to remove the paste from the vase a few times while grinding.
2
Now, let's turn our hazelnut butter into healthy Nutella: start adding two spoons of water and some spoons of skim milk to the butter. Add and mix one spoon at a time, so you can control its thickness. You can add a pinch of xanthan gum now to make our butter more dense.
3
Once you reach the desired consistency, add some cocoa and stevia (as much as you want) and stir with a spoon. Try and adjust sweetness or chocolateness to your taste.
4
Stir very well until our healthy Nutella looks homogeneous and... we are done! You can keep in jars and refrigerate (or spoon it all at the moment!).
