Start of with a medium pot full of water and boil the bones for broth.

(You can always use short cuts for my recepes).

When done use colander to avoid any chunks of meat going into your maseca.

Now that your broth is ready let it cool down a bit.

After it's cooled down pour the maseca into the mixing bowl along with 2 cups of broth and the salt.

Mix.

Add broth as you go.

(The tortilla dough should be firm but soft enough to mold)

As the tortilla dough sits, heat your iron griddle on the stove on medium high heat.

Get out your handy dandy tortilla presser and two sheets of plastic.

NOTE: If you don't have a tortilla presser then use the back of a flat dinner plate.

If you don't have plastic sheets then use a grocery bag and cut into two squares.

(Iron griddles, skillets, pans etc.

is the ideal cooking ware for the best tasting tortillas but a non-stick griddle is fine too)*

Now that you're ready to go, grab some of the tortilla dough and work it in your hands into a ball (the smaller the ball the smaller the tortilla...the bigger the ball the bigger the tortilla so I leave this up to you).

Lay the first plastic sheet on the tortilla presser and place the ball in the center, now put the second plastic sheet on top of the ball and close the presser and press down.

This next step is the tricky part for beginners.

Lift the tortilla while still inside the two plastic sheets.

Lay it flat on your hand (I use my left first) now peel the top sheet then place the exposed side of the tortilla on your other hand and peel the second plastic sheet away... gently but surely lay the tortilla on the griddle.

The tortilla is ready to be flipped when the dough on the uncooked side changes color from a pale white to a yellowish tone.

Wait about 30 sec.

and then flip it again but this time press down on it with your spatula.

It should rise on its own and that means it's ready.

If it doesn't rise then yeah, it does suck but trust me it's ready lol

Repeat this process until you're done with the dough.

Keep your tortillas nice and hot by covering them in paper towls and aluminum foil.
