1. Heat a large cast-iron skillet over moderately high heat. Meanwhile, in a medium bowl, break up the meat with a fork. Season with half of the salt & pepper. Stir in the scallions. Form the meat into 4 equal patties.

2. Cook the hamburgers about 5 min. on each side for medium rare. Transfer the hamburgers to a platter and cover with foil to keep warm.

3. Reduce the heat to moderately low. Add the shallots to the skillet and stir to scrape up any bits of meat stuck to the bottom of the pan. Cook until the shallots begin to brown, about 1 min. Pour in the wine and increase the heat to high. Add the remaining salt & pepper and cook until reduced by half, about 3 min. Stir in the butter until it is incorporated and sprinkle in the parsley.

4. Serve the hamburgers on individual plates with sauce over each.
