After roasting your favorite whole ham, drain off excess juice into a large sauce pan. In a separate bowl, mix corn starch and cold water, adding water in very small amounts as you mix thoroughly until smooth. (Warning: if you mix too much water into the corn starch at one time, you will get lumpy gravy thickener, resulting in the need to start this step over again as these lumps will NOT go away if you continue). Add pineapple juice and brown sugar to the ham juice and begin heating over medium- high heat. Stir SMOOTH corn starch/water mixture into ham juice stirring constantly. Gravy will thicken as it is heated. You should not need any additional seasoning.
