Peel vegetables & cut into slices and simmer for 2 minutes

Boil the mix of wine, coconut milk & orange juice, fresh ginger small pinch of salt & white pepper until thick

Warm up your portions of mashed potato

Blanch prawns in white wine & a small dash of water for 1 minute

Add avocado into prepared sauce, cook for 2-3 minutes then add your blanched prawns

Season fish, dust with flour & pan-fry it in a mixture of olive oil & butter until golden brown, for around 5 minutes.

On the plate arrange a nest of vegetables in the centre, place your fish on top with piped mash one side of the fish, on the other side arrange the avocado & prawns from your sauce & drizzle the remaining sauce around the plate.
