In a double boiler, melt chocolate into whipping cream. Meanwhile, in a KitchenAid mixer or using a hand mixer, beat cream cheese until whipped and creamy. Add sugar, melted chocolate, sour cream, eggs, vanilla, and Guinness and beat until creamy. Pour over crust.

Bake for 60 minutes. Then turn off oven and leave oven door slightly ajar for 60 minutes. Remove cheesecake from oven and cool completely. Refrigerate overnight.

Combine cream and sugar in a medium mixing bowl. Using a KitchenAid mixer or a hand mixer, whip the cream on medium-high speed until stiff peaks form. Add Bailey's and mix on low just until combined.
