Fry bacon until crisp and drain.

Crumble into small bites and set aside.

Heat oven to 350u00b0.

Grease a 9 x 13-inch baking dish with shortening or butter.

Bring water to a boil.

Slowly add grits and salt, stirring as you add.

Simmer 4 to 6 minutes, stirring occasionally.

Remove grits from heat; add 2/3 of bacon. Keep remaining 1/3 to garnish.

Add eggs, 1 1/2 cups of cheese and onion flakes; mix well.

Pour into prepared dish.

Bake 40 to 45 minutes or until a knife can be inserted and comes out clean.

Top with remaining cheese and bacon; drop butter over mixture, allowing butter to melt into mixture.
