Place the heavy cream, vanilla, sugar, and cinnamon in a mixing bowl and whip until soft peaks form.

Line a tray with parchment paper and place dollops of cream on the tray (I got 5 good sized-dollops from 1/2 cup of cream). Place the tray in the freezer and freeze until firm, about 2 hours.

Heat grill on low. Halve and pit the peaches and brush with a bit of olive oil. Place on the grill, cut side down and grill for 2-3 minutes. Turn and grill an additional 2-3 minutes. You don't want the peaches super soft, just warmed and a bit caramelized. Remove them from the grill.

Peel peaches (or not) and serve topped with frozen whipped cream. The extra dollop of whipped cream will not be wasted, trust me!
