1
Start by seasoning both sides of your steak with salt.
-
2
Pat it into the steak.
-
3
Season one side with the cracked black pepper.
-
4
Let this sit on the counter, at room temperature for about 30 minutes.
-
5
During this time, heat you grill.
-
6
I always prefer charcoal, but do what you want on this step.
-
7
Take the butter and add it to a small bowl.
-
8
Add the blue cheese and chives.
-
9
Mix well and set inside the refrigerator to cool.
-
10
Once the grill is preheated, clean your grates using a wire brush or your favorite method.
-
11
Then take the steak and place onto direct heat, cracked pepper side down.
-
12
Sear the steak for about 4 minutes.
-
13
Turn it over and cook until your desired tenderness.
-
14
I go medium, to medium-rare nowadays which is another 4 minutes or so.
-
15
Remove from the grill, and place onto your serving dish.
-
16
Top with the blue cheese butter, and gently spread it over the top before slicing into it.
-
17
Yes, this is what I had for lunch, and after 3 hours of working outdoors, it was well deserved.
-
18
Thats it.
-
19
And trust me, the combination is out of this world.
-
20
The result is a perfect flavor combination.
-
21
My brother-in-law turned me onto the blue cheese and steak combination years ago.
-
22
To this day, its one of my favorites.
-
23
As much as I love cooked mushrooms with my steak, this one tops it.
-
24
The grilled New York Strip with blue cheese butter has this creaminess, along with that great kick from the blue cheese that will just blow your mind.
-
25
Trust me, its a good one.
-
26
Hope you enjoy!
