Grease and flour an 8 x 11 inch tart pan. Combine the flour, ground almonds, sugar, a pinch of salt and one egg in a food processor and pulse to form a dough. Remove and knead by hand. On a floured work surface, roll the dough into a 9 1/2 x 13 inch rectangle then use to line the tart pan. Press the dough into the corners and up the sides. Chill for 40 mins.

Meanwhile, cook the beans in boiling, salted water for about 5 mins, then drain.

Preheat the oven to 350u00b0F. Whisk the remaining eggs with the creme fraiche (or sour cream, if using) and season, adding a pinch of nutmeg to taste. Add the chopped mint and 3/4 of the Parmesan. Arrange the beans and sun-dried tomatoes in the bottom of the tart shell then add the egg mixture. Sprinkle the remaining Parmesan over top and bake in the bottom 1/2 of the oven for 45 mins. Remove from the oven and set aside to rest for 5 mins.

To finish, heat the oil in a frying pan and briefly fry the remaining mint leaves until crispy. Arrange on top of the tart and serve.
