Trim the leaves from the rosemary, peel the garlic and place both ingredients in a food processor. Add the sherry vinegar and salt and pulse until the garlic and rosemary are finely chopped. Add in just enough olive oil to form a paste. Spread on both sides of the steaks and marinate for a minimum of two hours, preferably overnight.

Broil or grill steak about 3 minutes per side for medium-rare, or longer if desired. Let steak rest for 5 to 7 minutes and then slice thinly against the grain.
