Place 2 grapefruits in a large saucepan and cover with water. Cover with a plate to keep grapefruit submerged. Bring to a simmer and cook until soft, about 2 hours.

Preheat oven to 325u00b0F. Grease a 12-cup muffin pan.

Remove grapefruit from water and cut in 1/2. Remove seeds. Using a scale, weigh out 18 oz of flesh and peel. Transfer to a food processor and puree until smooth. Add eggs and mix until combined.

Gently melt butter and chocolate together. Add to grapefruit mixture along with sugar, ground almonds, pistachios and baking powder. Distribute between muffin recesses and bake for 40 mins, or until a skewer inserted in the center comes out clean. Dust with powdered sugar and garnish with cotton candy and grapefruit segments.
