["Cook rice in lowfat milk in saucepan over medium heat, stirring constantly, till rice is plump.", "Beat egg yolks with 1 tsp.", "water; add in sugar to yolks and beat again.", "Add in yolk-and-sugar mix to rice and cook a few min, stirring.", "Remove from stove.", "Beat egg whites till stiff and fold into rice mix.", "Sprinkle nutmeg on top and place under broiler a few min till top is lightly browned.", "Chill till hard.", "NOTE: I use a 1 1/2 qt Corning Ware or possibly Visions pan for this because you can cook the rice, broil, and serve all from the same pan.", "It is time-consuming because of all the ""stirring constantly"" (about 1/2 hour for the rice to cook without scalding the lowfat milk) but the taste is worth the time, and it is great to make on a chilly fall or possibly winter afternoon when you do not mind sitting over the stove awhile!"]
