Grace’S Pignoli Cookies

   Preheat oven 350

   Combine sugar, flour and salt in medium bowl and toss lighty with a fork

   Break almond paste with your fingers and place in mixing bowl of an electric mixer.

   Add egg whites and beat at low speed until smooth.

   Add almond (or vanilla) extract and flor mixture and beat until flour is blended in, about 30 seconds. DO NOT OVERBEAT.

   Let dough stand for about 30 minutes

   Using a teaspoon, scoop a rounded spoon of dough and dip it, upside down into the pignoli nuts.

   Slip the dough off the spoon using another spoon.

   Place the dough on prepares cookie sheets 2 inches apart.

    Bake for about 25 min.
