Wash the beets with the skin on. Rub olive oil on them and salt. Place them in an oven-safe dish and roast in the oven at a moderate temperature for approx. 40-45 minutes (until the center feels soft). Let cool.

Meanwhile, rinse and chop the arugula and the pear. Once the beets have cooled, peel them and chop them as well. Mix all the vegetables in a large bowl, along with the chopped walnuts and crumbled blue cheese.

Juice the lemon and mix that in with the vinegars, water, and mustard. Slowly pour in the oil, mixing it in with a fork so that it doesn't seperate from the vinegar mixture. Add salt and pepper to taste. Stir.

Pour the dressing over the salad or serve apart in a different bowl.
