German Potato Salad – a delicious recipe with potatoes, onion, celery, salt, bacon, butter. Easy to follow and perfect for any occasion.

Servings: persons

1/2 peck small new potatoes
1 onion, minced
3/4 c. celery, minced
salt and pepper to taste
1/2 lb. bacon
2 Tbsp. butter
1 Tbsp. flour
1/2 c. cider vinegar
1/2 c. water
1 tsp. sugar

Boil potatoes in jackets.

Peel while hot and cut in bite size pieces.

Add onion, celery and salt and pepper.

Dice bacon and brown.

Remove bacon bits and leave 2 tablespoons fat in skillet. Add butter, flour and sugar.

Blend well and add vinegar and water.

Boil 3 minutes.

Pour over hot potatoes and mix well. Serve.
