1/2 cup sweetened shredded coconut
1/3 cup applesauce

Preheat oven to 350u00b0F. Line 2 - 12-cup cupcake pans with paper liners. Combine cake mix, 3/4 cup water, coconut, applesauce and eggs. Scoop into prepared pans and bake for 15-18 mins, or until a toothpick inserted in the center comes out clean. Let cool.

For the frosting, whisk together egg yolks, evaporated milk and vanilla in a large saucepan. Add sugar and butter. Cook over medium heat for 12 mins, or until thickened and golden brown, stirring constantly. Remove from heat and mix in coconut and nuts. Let cool.

Frost cupcakes then drizzle with melted chocolate. Garnish with a pecan half and extra shredded coconut.
