Ingredients: 1&3/4 c. flour (good with half all-purpose, half spelt or whole wheat); 1 t. baking powder; 1/2 t. baking soda; 1/2 t. salt; 1&1/2 t. cinnamon; 3/4 t. nutmeg; 2/3 c. oil; 2 eggs; 1&1/2 c. brown sugar; 1&1/2 t. vanilla extract; 4 medium or 3 large, tart apples, peeled and sliced

1 t. baking powder
1/2 t. baking soda
1/2 t. salt
1&1/2 t. cinnamon
3/4 t. nutmeg
2/3 c. oil
2 eggs
1&1/2 c. brown sugar
1&1/2 t. vanilla extract
4 medium or 3 large, tart apples, peeled and sliced

Grease a 9x9 pan. Set oven to 325 if glass, 350 if metal.

Whisk dry ingredients together.

Mix wet ingredients together till completely homogeneous.

Add dry mix to bowl with wet. Mix with a rubber scraper till well combined. Scrape out dough into baking pan.

Press apple slices into cake, standing them upright, and making sure to push them to bottom of dough.

Bake about 75 min if in glass, or 60 min if in metal pan. Doneness time varies based on moisture of apples, whole wheat, etc. Dough on top of cake should be glossy, but not wet when tapped, at end of baking.
